Vitamixin’!

Part of my healing involves eating a lot of vegetables.  80% is is ideal for healing (60% for maintaining health).  Getting close to that is going to be tough.  SO… I finally got a Vitamix to help ease more veggies into my diet.  It seems easier to drink them than to eat them… to me.

This most awesome Vitamix came with this pretty cool recipe book.

I have posty noted (yeah, it’s a word) several recipes in here to try, but I started with this one.

Sweet Greens Smoothie (pg. 50)

1/2 cup water
1/2 cup cucmber, peeled, chopped
1 cup fresh spinach, washed
1 cup frozen unsweetened strawberries (I used fresh)

1. Place all ingredients into the Vitamix container in the order listed and secure lid.

2.  Select Variable 1.

3.  Turn machine on and quickly increase speed to Variable 10, then to High.

4.  Blend for 45 seconds or until desired consistency is reached.

It doesn’t LOOK all that great, but it wasn’t terrible at all!

Ooh, I’m jealous! I’ve been lusting after a Vitamix for ages, but they are freaking expensive. To be honest, my cheap blender does the job, so I have no excuse for not getting my daily green smoothies in!

I think we could still get at least our greens in without it… it would just be a lot of chewing. :)
