I love this recipe for many reasons! But mainly because it’s tasty and convenient! I have every one of Dana’s cookbooks. Don’t be scared off by the “low-carb” title. The recipes are not only simple, they are healthy, tasty and easy to modify (fat and carbs). You’re more than likely to find a lot of the great ones posted here – tasted and approved! Most are even kid approved!
Spanish “Rice” ( 15 Minute Low~Carb Recipes – modified)
1 lb lean ground beef (I use grass-fed beef for a better omega-3:omega-6 ratio)
1 bag partly thawed frozen cauliflower
1 tsp minced garlic
1-14.5 oz can diced tomatoes w/green peppers and onions
1/2 tsp ground cumin
1 tsp Worcestershire sauce
salt and pepper
Start browning beef over medium-high heat. Meanwhile run the cauliflower through the shredding blade of your food processor. Set aside.
Go back to the beef and start breaking it up. When the meat is browned, add the garlic, tomatoes, cumin, and Worcestershire sauce. Bring the whole thing to a simmer.
Stir in the cauliflower “rice”, cover, and let the whole thing simmer for 3 to 5 minutes. Salt and pepper to taste and serve.
NOTE: I have modified this recipe to be even easier than the original. A speedy, delicious lunch or dinner. If you have more time feel free to substitute canned veggies for fresh tomatoes (2 cups) , bell peppers (1/2 pepper) and onions (1/2 medium). If you prefer spicy add green chillies.
