Grain-Free Zucchini Brownies

And you thought your kids wouldn’t eat anything green!

I’ve been on a mission to help nourish my children after school with tricky treats.  They gladly have agreed to taste test my newest creations.  That was the hardest part!  Thanks to fastpaleo.com I’m able to check off another kid approved snack with Grain-free Zucchini Brownies.

WARNING:  I don’t count fat, carbs or calories with my children.  I do however maximize the quality of ingredients they get.  I don’t think it’s until we damage our metabolisms by junk that calorie watching is needed.

Preheat oven to 350.

  • 1 cup almond butter
  • 1/3 cup honey ( I use xylitol)
  • 1 1/2 cups shredded organic zucchini ( I use 2 cups)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp all spice
  • 1 tsp baking soda
  • 1 cup dark chocolate ( I use nestles all natural dark chocolate morsels)
  • 1 egg

Makes 16

MIX it up!  Pour batter in a 9 x 9 baking dish greased with coconut oil, and bake for 30 – 40 minutes ( I’ve found close to 40min) at 350 degrees.

And there ya have it!  A paleo friendly treat your kids will love!

NOTE:  For an extra dose of healthy, I add 3 Tbsp coconut oil and 1/4 cup coconut flour for thickener.
