Peanut Butter Chicken Stir-Fry

Stir-fry recipes are a great way to save time and get a full serving or two of healthy veggies!




1 small onion chopped
1 cup celery chopped
3 stalks fresh broccoli cut
1 lb chicken breast cut in bite size pieces
2 Tbsp. Natural Peanut Butter
1 tsp. Lite Soy Sauce
2 Tbsp. Sesame Oil



  1. Stir fry all veggies in sesame oil until soft.stir fry veggies
  2. While veggies are cooking, mix together peanut butter and soy sauce. 
  3. After the veggies are done cooking set aside and cook chicken.  Add peanut butter mixture when chicken has cooked through.chicken mixture
  4. Mix veggies in with chicken and serve.

thanks T! I made this and absolutely loved it! Kids gave it a “its a keeper” grade. Of course, I substituted tofu for chicken and olive oil for sesame oil (I never seem to follow a recipe as written, a disorder perhaps?) Looking forward to more recipes from you.
